Where is the American blade shape? The United States has a rich, deep culinary history, but no domestic chef's knife to call its own, until now. I designed the Bowie Chef® to pay homage to an original American shape that is steeped with almost 200 years of history...the Bowie knife.
Utilizing its big belly and edge geometry along with full tang construction, our 8.2" Bowie Chef® is an indispensable all-purpose kitchen knife that is perfect for slicing, dicing, chopping, and rocking cuts. The clip point on this knife is purposeful and unique in that it facilitates higher rocking cuts due to the point being slightly higher than conventional chef knives, allowing a more fluid motion while chopping. Due to the knife's balance and weight, it is also excellent for heavier duty work, such as cutting larger vegetables and proteins.
The AEB-L stainless steel blade is a workhorse in the kitchen and can stand up to the most demanding jobs. AEB-L has great edge retention, durability, and toughness, and since the grain structure of the steel is so small, it is also very easy to sharpen.
